• 1 teaspoon ground cumin

• 6 cups vegetable broth

• 1 cup dried red lentils

• 2 carrots, diced

• 2 stalks celery, diced

• 1 potato, peeled and diced

• ½ teaspoon salt

• ¼ teaspoon pepper

• 1 bay leaf

• ¼ cup chopped fresh parsley (optional)

• 2 tablespoons lemon juice (optional)

Cooking Directions

Step One

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.

Step Two

Stir in the cumin and cook for an additional minute or two. Add the vegetable broth, lentils, carrots, celery, potato, salt, pepper and bay leaf. Bring to a boil then reduce the heat to low and simmer for 30 minutes or until the vegetables are tender and the lentils are cooked through.    

Step Three

Remove from heat and stir in parsley (if using). Remove bay leaf before serving. Taste and adjust seasoning as desired; if desired add lemon juice before serving for a bit of brightness. Serve hot with crusty bread or crackers on the side if desired.
